Produced using prime cuts of legs from adult beef. The preservation and curing method use a mixture of salt, spices, garlic, cinnamon, nutmeg, bay leaves, pepper, juniper berries. It is matured for up to 8 weeks in the natural climate of the Valtellina area where it acquires its unmistakable flavour and aroma.
