After 60 days of maturation, the original Monnalisa cheese is ready to be treated with a concentrate sun dry tomatoes paste, which is manually rubbed all around the cheese. Furthermore, the light tomato layer gradually gives a nice scent to the pecorino cheese, giving them a more intense flavour.
